HAPPY OFFICIAL AUTUMN PLUS THREE DAYS!
Today I am going up to Notre Dame to see my little seester! And the best part is... my other sister is coming with me!! It will be one big happy Park lady reunion. We are excited to be tourists on campus, soak in that Fighting Irish spirit, and hoot and holler at the football game. The only thing missing will be our brother Eugene - but then it wouldn't be a Park lady reunion, it'd be a Park sibling one, which is only even better - that reunion will happen in a couple months though!
College football is one of those things that just feels like fall. I'm ready to put on a sweater, curl up to read a book, and drink hot cider out of my gigantic mug. Ready to go apple picking and step on a few crunchy leaves. Ready to kick ass with Aava in a chili cook off (it's so happening) and carve a pumpkin or three. Ready to feast at our annual Friendsgiving and do the pre-Thanksgiving meal calorie burning tradition of running the Drumstick Dash with my sibs. Things that make for a busy, fulfilling autumn I would say.
Including nibbling on these babies. They're a little boozy with some maple whiskey both inside the cake and on the glaze. Instead of traditional frosting, I opted to glaze and top them with all sorts of goodies. You're left with lots of mini cakes! It seems pretty festive and should be in your stomach like yesterday.

Maple pecan cupcakes with maple whiskey glaze
For the cake
3 cups flour
2 cups sugar
3/4 cup oil
2 1/2 tsp baking powder
1 tsp maple syrup
1/2 tsp salt
1 cup milk
3/4 cup chopped pecans
2 tablespoons maple whiskey
For the glaze
Preheat oven to 350 F. Line or grease a couple cupcake pans.
Mix the flour, baking powder, and salt together in a bowl then set aside.
In a larger bowl, mix the oil and sugar until well combined. Add the eggs and beat until well combined. Then add the maple syrup, whiskey, and milk. Whisk until it all comes together.
Add the flour mixture and mix until just combined and smooth. Add the pecans. Pour batter into the cupcake liners and then bake for 23 minutes or until a toothpick comes out clean when put in the center of a cupcake.
Remove cupcakes from oven and onto a baking rack, let it cool completely.
For the glaze, just stir in some milk into some powdered sugar until it makes a nice somewhat runny glaze. Add in a little maple whiskey for flavor until it reaches the flavor you like! Top the cupcakes with the glaze and whatever toppings you desire - it's your fall party!
