In the left hand corner of my laptop screen, I have a lovely little list I like to call, "in another life." I read it every morning and every evening. What's on this list?
As of now, I have the following:
- Try wearing less work out clothes every day
- Run another mini marathon
- Listen to podcasts!
- Eat less sammies, more salads and cook
- Take more photos
- Get back to reading books! Finish that Atul Gawande book.
- Call the people I love once a week (or at least text them)
- Buy flowers for the apartment
It's little things I've been saying I'd love to do, but I dismissed as something I'd do "in another life." The list changes some days, but only a few tweaks.
... wait Erica, what the heck? These aren't crazy things at all!
I don't know why I think these things are so difficult to try. I'm a creature of habit. I like routine, don't you? But unfortunately once I get comfy, I also fall into that all-too-familiar trap of being lazy. And then I make little lists and put it on laptop sticky notes. Sooo here we are now.
Time to kick my butt into mental shape and go for it. We're gonna do these things, guys. In this life!
Luckily Andrew's peeked at the list and he's been super awesome and cute and surprising me with bouquets of flowers every once in a while for the single vase I have sitting on the windowsill next to my table where I like to take pictures for the blog. These ones were so beautiful and I had fresh cookies so I took out my camera and had an impromptu photo shoot while he cut up the peppers for the pizza night. And they're still beyootiful in my vase now and I'm smiling thinking about my little list and getting things done. And wanting one of these cookies. I should add "increase cookie consumption" onto the list, yes? Thanks guys, I knew you'd understand.
Dark brown sugar ginger cookies
14 tablespoons unsalted butter, softened
1 3/4 cup packed dark brown sugar, divided
3/4 teaspoon salt
1 large egg
2 teaspoons vanilla
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon ground ginger
Preheat oven to 350 F. Line two baking sheets with parchment paper or Silpat mats.
Mix butter, brown sugar, and salt in a large bowl until combined. Add egg and vanilla and mix until well combined. Add the flour, baking powder, baking soda, and ginger to the bowl and mix until well combined.
Put 1/4 cup of the dark brown sugar in a separate small bowl. Take a small ball of dough and roll it in your hands and then roll in the brown sugar. Place on the cookie sheet. Do this for the rest of the dough (it's like making snickerdoodles!)
Bake for 10 minutes or until the cookies are light brown in color. Put cookies on a cookie sheet and let cool. Enjoy!
